The Slovak pilot of the FOODRUS project organised three replication workshops in June and September this year with a fourth one planned to take place in November 2023. The aim of the workshops is to present the results of the project to the relevant local stakeholders. For instance, during the workshop organised in September, the Slovak pilot officially launched the Zero Waste Cookbook for Bread thanks to a collaboration with Zero Waste chefs that prepared some recipes from the cookbook. The public was invited to taste the outcome of the zero-waste cooking show. Several talks and discussions were organised such as the on the topic of barriers leading to food waste in HORECA, or on the possibility to upcycle different surplus food streams. More information will be shared via FOODRUS website and newsletter on the replication workshops organised by the Danish and Spanish pilots, so stay tuned!
